It's summer time and it's HOT! Of course this time of year we don't always want to heat up the kitchen by cutting on the oven. Try a couple of hearty salads to fill your belly and keep you cool.
Here's a Quinoa and Shrimp salad. Filled with great ingredients.
Ingredients: Grilled Shrimp (you can sub cold shrimp), Cooked Quinoa, halved purple grapes, 1 can of chickpeas (drained and rinsed), sliced cucumber, chopped cilantro.
